Great Recipes for Leftovers!

So if you are like me, you hate food waste. There has been way too many times that I have opened the fridge only to find a squishy cucumber shoved to the back with no hope of saving it. 
This year I have tried to reduce our food waste as much as possible, and that involves becoming a little adventurous with recipes! I usually begin following a recipe...… and then halfway through making it I just let lose and do whatever pops into my head! Sometimes it works and then sometimes..... it really doesn't work! But you have to challenge yourself right??!!

Anyway my three favourite recipes for leftovers are:

1: Banana bread - So many different recipes for banana bread so I would suggest trying a few to see which is right for you and your family. We make our banana bread with just some plain flour, eggs, bananas, a pinch of salt, a dash of milk and if we are lucky enough to have chocolate chips in the cupboard then those are thrown in too!

2. Egg Muffins - These are so simple to make and take no time at all! Just mix in your leftover eggs, tomatoes, ham and some milk. You can add spinach if you have any! This recipe is great for clearing out the fridge! Season with salt and pepper and mix together. This is easier to mix in a jug as we will be pouring it into a muffin tray to go into the oven. These are really quick and easy to make, and are yummy!!

3. Pitta Bread Pizza - Bread was one of the biggest food wastes in our home. It seemed to go off really quickly, even before we thought to half the pan and put it into the freezer! We decided to make pizza using some pita breads on night and it was awesome! We used tomato sauce for the base sauce and crumbled some mozzarella onto it. We also had some chorizo in the fridge so that got chucked on to! We had a lazy pizza night in front of the tv with very little effort!
